Europa from Brazil

Hi Nanna,

On November 29 we held a retirement ceremony for Europa. She will now be retired at our small farm where she will enjoy a stress-free life!

For the past 23 years she has won more state and national titles than we can remeber and is, until today, the horse who has won most titles in Brazil! I couldn't help but wear my treasured ring as another way of honoring her today and forever....

So here is a photograph for you - thank you for being a part of our story!

Gingerbread, Horses and Birch Branches

There are certain smells that belong to Christmas like cinnamon, cloves and ginger. In the old
days the exotic spices were status symbols and only the rich people could afford them.
Some spices were as expensive as gold and they were brought from the distant countries. 
Christmas time was time when people wanted to put best on the table 
and in gingerbread these valuable ingredients were used generously.

Baking gingerbread is a lot of fun and with the shapes your imagination is the only limitation.
Children love making them - just take care that they don´t eat
all the dough before the cookies are baked...



We baked horses, dogs and hearts, of course!


We have some puppies in the house for the Christmas Eve and this year we
have "Christmas Birch" instead of  the actual Christmas tree.



RECIPE:

(makes about 200)
Preparation time: 30 minutes
Cooking time: 5-7 minutes per batch
Oven temperature: 200 °C (400°F)

1 1/4 cups (300 g) butter
1 1/4 cups (300 g) sugar
3 eggs
1 cup (2 1/2 dl) dark syrup
2 ts ground cloves
2 ts ground cinnamon
2 ts ground ginger
1 tablespoon grated orange rind
about 7 cups (1 kg) white flour
3 ts baking soda

1. Boil the syrup and spices, add the butter and beat until the mixture is cool.
2. Beat the sugar and eggs.
3. Mix the soda in with part of the flour and then combine with the syrup-margarine mixture.
4. Add the whipped eggs and the rest of the flour. (Do not knead the final mixture)
5. Cover the dough with plastic wrap and leave overnight in a cool place.
6. Roll out the dough, cut up into shapes and bake the cookies in the oven until golden brown, 
5-7 mins.
